A Easy Quick Fall Dinner: Air Fryer Brown Sugar Rubbed Pork Chops with Apples and Vegetables

This air fryer meal is one of the easiest ways to get the family gather around the dinner table in 30 minutes or less. It is a one stop shop because you cook the meat, apples and vegetables all together in the air fryer. It helps eliminates the mess and cuts down the cooking time. This meal is the perfect blend of fall flavors with the pork chops getting coated in a sweet, yet smoky brown sugar rub and the apples and vegetables being tossed in olive oil with light spices. You can enjoy this main course alone as is or pair it with just about any side dish.

Air fryer pork chops have completely changed the way I view this protein and that is a good thing! If I am being honest, I don’t normal cook pork chops. I was always intimidated and viewed them to be hard to get right. It is easy to over cook them, make them tough and dry them out in a matter of minutes. In addition, they are always so hard to tell if they are done by cooking them in a pan over the stove or even by grilling them. But, when you air fry them it is a complete game changer! Which is why I am here to tell you that if you are having those same feelings as me, not to worry! This recipe is here to help and once you try it out, you will love it and hopefully change your view too!

Fall is one of my favorite times of the year. I love all of the fall flavors, colors and ingredients including: the spices, apples, brown sugar and cabbage just to name a few. So, with that being said, I took all of these ingredients that love and turned it into a one stop shop meal for you all to enjoy! I also wanted something that was easy, fast and didn’t require a ton of clean up at the end. This entire meal is all cooked in the air fryer and takes 30 minutes or less!

Just like my air fryer salmon, I also used a rub on this protein for the same reasons. I did not want a huge marinated mess in my air fryer and I love the crispy outside it gives to the pork chops. Plus, when the rub soaks into the meat, it makes it extra flavorful. I also like to let the meat shine from the protein itself and the brown sugar rub. It doesn’t require any fancy sauces or heavy breading to make this taste delicious.

4 pork chops, 1 and 1/2 inch thick

2 golden declicious apples, sliced

1 sweet onion, cut in thick sliced

1/2 red cabbage cut in thick chunks

1/2 TBSP olive oil

Salt and Pepper

1/2 TSP cumin

1/2 TSP paprika

Brown sugar rub (see recipe below)

INGREDIENTS: For the Brown sugar rub

1/4 cup brown sugar

1/2 TBSP chipotle seasoning

1/2 TSP onion powder

1/2 TSP garlic powder

1/4 TSP cayenne pepper

1/2 TSP paprika

1/4 TSP black pepper

1/4 TSP salt


  1. In a bowl, mix all of the brown sugar rub ingredients together. Rub all sides or each pork chop with the rub and make sure no pink is showing. Set aside.

  2. Chop and slice your apples, sweet onion and cabbage and place in a bowl. Drizzle with olive oil and sprinkle with salt, pepper, cumin and paprika. Set aside.

  3. Pre-heat your air fryer to 400 degrees. Once done preheating add your pork chops. Cook for 12 minutes flipping half way through.

  4. After 12 minutes, add your vegetable mixture and cook another 5-7 minutes until they are crispy and tender. ** NOTE: Before adding the vegetables I would cut slits in your pork chops to check the doneness of them. You want them to be nice and slightly pink. If they are too pink, they are not done yet and if they are white they are on the verge of being over cooked. **

  5. When done, slice your pork chops and serve right away with your favorite side dish. I did serve ours with sweet potatoes and it was perfect!
