Breakfast for dinner, dinner for breakfast... I don’t even know anymore. But, what I do know is that this loaded breakfast pizza with an everything bagel crust is mind blowing! It is a meal that is equally amazing at anytime of the day. This AM pizza calls for a pre-made pizza crust that is crispy, yet soft and coated in everything bagel seasoning, an olive oil and garlic base that then gets topped with 2 types of gooey cheese, 3 different vegetables, one type of protein, herbs and spices. It looks like a party and tastes like a party! This is a pizza that you definitely need in your life ASAP.
If you are looking for a delicious way to start your day, look no further. This colorful flavorful breakfast pizza will get you started on the right foot. This pizza is piled high with all of your favorite key ingredients: bacon, eggs and cheese. To enhance this pizza and kick it up a notch, I also add a variety of vegetables and spices. When I am having brunch, I always have to have some sort of potato aspect. I am obsessed to say the least. Whether that be shredded hash browns or breakfast potatoes, I love them in any shape or form. So, this is where the potato slices on the pizza come in. They are the hash brown aspect. The tomatoes and green bell pepper are a nice touch of crunch and colors that get added. Plus they are healthy, juicy and fresh.
This recipe is so simple because I opted to use pre-made crust as opposed to taking the extra steps to make a homemade version. Do not get me wrong any homemade crust is incredible, however it is more time consuming and this recipes cuts the prep and cooking time down by opting for the pre-made version. In addition, this also frees up more time for you to prep your toppings. There is absolutely nothing wrong with opting for pre-made crust, the dish taste just as heavenly and you don’t even notice a difference.
Your breakfasts just got a whole lot better and if this isn’t brunch goals, I don’t know what is! These step by step photos above show you my layering technique and one thing to note is that you do cook it without the eggs first for 8 minutes and since the bacon does get pre-cooked as well, you leave that off until after the eggs go on as you do not want those to overcook/burn either. So, the last photo shows eggs and bacon getting added on after the vegetables, cheese and crust bake for a bit first.
Once it is done and you let it cool for 10 minutes then cut, you will have perfectly golden eggs and crust and you are just bites away from living your best breakfast life.

Serves 5, INGREDIENTS:
1 Roll Pillsbury pizza crust, lightly floured on each side
5 Eggs, do not whisk. Crack them and pour directly onto the pizza
2 Cups mozzarella and parmesan cheese, mixed together and shredded
1/2 - 3/4 Cup green bell pepper, diced
About 5-10 thinly sliced Yukon gold potato coins (half of a potato) from a large potato not the fingerlings. NOTE: If you want more potato then I would dice them.
1/2 Cup grape tomatoes, quartered
7 Slices of bacon, chopped and cooked and seasoned with black pepper
3 Large cloves of garlic, minced
1 and 1/2 TBSP olive oil
2 TBSP everything bagel seasoning
Hot sauce for serving with
Dried parsley flakes for garnish
Red pepper flakes for garnish
Prep all your ingredients. Dice you bell pepper, quarter your tomatoes, minced your garlic, slice your ykon gold potato, chop your bacon and season your bacon with black pepper.
Spray a pan with non stick spray and cook your chopped and seasoned bacon until crispy, but slightly under cooked (any uncooked pieces will cook when baking on the pizza at the end.
Pop open your pizza dough package and sprinkle flour on a flat surface. Unroll you’re dough on the flour surface. Coat both sides with flour and spread out evenly.
Preheat oven to 400 degrees and prepare a rectangle baking sheet with non stick spray.
Transfer your dough to the prepared backing sheet and cover the entire surface with the dough. NOTE: Stretch out the dough on all sides and corners until the touch the pan. Be sure to do this carefully as you do not want the middle of the dough to rip.
Brush the dough with 1 and 1/2 TBSP olive oil and sprinkle your minced garlic evenly over the dough.
Sprinkle the edges with your everything bagel seasoning to create that everything bagel seasoning crust.
Sprinkle with about 1- 1 and 1/2 cups cheese. Then, sprinkle with your diced green bell pepper. Add your slices of ykon gold potatoes. Make sure to leave open spaces throughout for the eggs.
Add your quartered tomatoes.
When oven is done preheating bake pizza in the oven for 8 minutes. When done, remove from the oven and add crack your eggs in the open slots you left and sprinkle the pizza with your cooked bacon. At this point after the eggs are cracked and bacon has been added, add in any left over tomatoes, bell pepper, and potato slices in any other little open areas try and slide some extra potatoes in if you Can. You might need to cut them in half.
Place back in the oven and bake for another 10 minutes until crust is golden brown and egg whites are settled and no longer jiggly or clear.
When done, remove from heat. Let cool for a minimum of 10 minutes. Sprinkle with dried parsley flakes and red pepper flakes. Once cooled, slice into squares with a pizza slicer. Serve with hot sauce and extra tomato and green pepper on the side.
