Keep Your Summer Going: Watermelon Cocktails Two Ways

Make the most of the rest of your summer days with these watermelon cocktails two ways. These two cocktails are vibrant, light and refreshing all in one. Whether you prefer prosecco, tequila or you enjoy both, these will be sure to quench your summer thirst.



You had me at watermelon. I don’t know about you, but I could drink a gallon of fresh watermelon juice. It is so crisp, hydrating, light and it also contains an abundance of health benefits. It makes for the perfect mixer in a cocktail. You can sip pretty without feeling any guilt.


Summer is unfortunately slowly, but surely coming to an end. And if you are like me and don’t want summer to end I have the perfect solution! I created two cocktails to help us keep summer going. In addition, I wanted to create something that can appeal to a variety of people. I created a mimosa like cocktail for those morning brunches and a boozy punch like cocktail for those taco Tuesdays and weekday happy hours. This way you get the best of both worlds. These cocktails are also great for when you host because you can make the watermelon limeaid mixture and then your guests can select what type of liquor they prefer.



When making the watermelon limeaid mixer, I like to strain the juice after I blend the watermelon cubes to ensure that I get any unblended watermelon pulp out so that it is pure juice. You can make this in bulk so you can have a pitcher for a crowd or you can cut the recipe in half and use as needed for 1, 2, or 3 cocktails.


One thing that I did want to note was that the fresh juice does not last long. So, if you make in bulk make sure to use it up within 24-48 hours. If you are not able to do so, I would opt to make smaller batches as needed.

Makes 7 Cups of Fresh Watermelon Limeaid Mix, INGREDIENTS:

7 cups cubed watermelon, blended and strained

Fresh lime juice from three limes

1-2 TBSP sugar

1-2 TBSP honey

Mini watermelon wedges for garnish

Jalapeño coins for the Watermelon Limeaid Margarita

Prosecco if you are making the Watermelon Limeaid Sparkler

Tequila and Cointreau if you are making the Watermelon Limeaid Margarita

DIRECTIONS:

  1. Cut your watermelon into cubes. Measure out 7 cups and place in a blender.

  2. Blend on high until it is mixed and turns into a juice form. You might need to stop in between to push down the cubes so they get blended.

  3. Once it is blended and in juice form, strain your juice into a bowl and discard any excess pulp that was caught in the strainer.

  4. Pour the juice back in the blender and add the lime juice, honey and sugar. Blend again to mix well.

  5. Keep in the blender or transfer to pitcher of your choice for serving.

MAKING THE WATERMELON LIMEAID SPARKLER:

  1. Pour Prosecco into your glass of choice. Fill about half to three quarters of the way up. Top with the watermelon limeaid mixer and garnish with a mini watermelon wedge.

Makes 2 cocktails, MAKING THE WATERMELON LIMEAID MARGARITA:

  1. In a shaker, add 4 jalapeño coins, 4 shots of tequila and 2 TBSP cointreau. Muddle until it is well mixed and the jalapeño spices are infused into the tequila.

  2. Fill your serving glass of choice with ice. Pour infused tequila over ice. Top with the fresh watermelon limeaid mixer and garnish with mini watermelon wedges and/or jalapeño coins.
