And the best part is that, these little treasures can be served cold or at room temperature. So, no cooking required!

Everyone loves a good grab and go snack when they are at a gathering. It makes for easy socializing, easy eating and an easy way to satisfy that hunger without becoming too full. With that being said, these holiday crostini’s three ways check all three of those boxes! No need for a fork or knife. You can still hold your cocktail and pop one of these in your mouth too. They are easy 1-2 biters and each one is packed with a combinations of flavors that are so scrumptious.

These are so simple, yet so delicious and they look fancy without being fancy. That is the great things about these little guys, you can easily impress your family and friends without a ton of stress!

Each one is different in their own special way, but they all are equally good. It is definitely hard to choose, which is why I had to make all three. These crostini’s are one of those items that once you put out will be gone in a matter of minutes. It is gauranteed to be a crow pleaser for everyone and anyone.

Let’s dive into the three different flavors and how to build each crostini.

Strawberry, Goat Cheese, Fresh Basil and Balsamic Drizzle:

  1. Finely dice the strawberries and place them in a bowl. Set aside.

  2. Thinly slice your fresh basil leaves. Set aside.

  3. To Assemble: Using a knife, cut some goat cheese from your goat cheese log and spread it onto your mini crostini. Top with some finely diced strawberries, then some freshly thinly sliced basils leaves and drizzle with balsamic to finish.

** Repeat this process until you have your desired amount of crostini’s. Serve right away or keep in the fridge until ready to serve. **

Here are some NOTES and TIPS on products and brands I used to create this (photos are shown above):

  • I used a dense, thicker balsamic. It is not the thin dressing like balsamic. You want a thicker glaze like consistency.

  • I got a goat cheese log and the key is to let it come to room temperature before spreading so that way it is easier to spread onto the crostini when assembling.

Thin Italian Roast Beef, Arugula Leaves, Roasted Red Peppers with a Dijon Honey Horseradish Spread and Black Pepper:

  1. To make the Dijon Spread: Whisk 1/4 cup horseradish sauce, 1/4 cup coarse dijon mustard, 3 TBSP lite mayo, 1 TBSP honey and fresh lemon juice from half a lemon in a bowl. Set aside.

  2. To Assemble: Using a knife, spread your Dijon honey horseraddish spread onto the crostini. Top with a few small thin slices of your Italian beef, one arugula leaf and one roasted red pepper. Sprinkle some black pepper over the top to finish.

** Repeat this process until you have your desired amount of crostini’s. Serve right away or keep in the fridge until ready to serve. **

Here are some NOTES and TIPS on products and brands I used to create this (photos are shown above):

  1. The Italian style beef: I purchased this from Whole Foods deli section. This is deli style roast beef as if it were to go on a sandwich. I got their Italian style and I had them slice it thin, so it almost was shreds like. If it is thin enough you also can shred yourself when you get home. But, make sure to get it thin and the Italian style gives it that extra flavor.

  2. The roasted red peppers: These come in a jar. Get the ones that are in in strips form. Jeff’s is my favorite brand, I also purchased this from Whole Foods.

  3. The coarse dijon mustard: The New Primal brand is by far the best I have ever had. It comes in a jar from Whole Foods. I highly recommend using this!

  4. Horserasddish spread is also from whole foods as well in the smoked salmon refrigerated section.

Sun Dried Tomato, Jalapeño and Garlic with Ricotta Cheese and Garnished with Fresh Thyme Leaves:

  1. Add 1 cup olive oil, 1 cup julienned sun dried tomatoes, 1/2 cup Jeff’s jalapeño peppers, 1-2 TSP juiced from the jalapeño jar and 1 TBSP garlic in a blender. Blend on low for a few seconds until mixed. NOTE: It will be chunky still, that is what you want. You do not want it to be blended until smooth. You want it blended enough so its all chopped and mixed together.

  2. To Assemble: Using a knife, spread some of your ricotta cheese onto the crostini. Next, using a small spoon, take a spoonful of the sundried tomato and jalapeño mixture from the blender and place it on top of the ricotta cheese. Sprinkle with fresh thyme leaves to finish it off.

** Repeat this process until you have your desired amount of crostini’s. Serve right away or keep in the fridge until ready to serve. **

Here are some NOTES and TIPS on products and brands I used to create this (photos are shown above):

  1. Make sure the suntried tomatoes come already sliced (julienned), it will make things a bit easier.

  2. My favorite jarred jalapeños are Jeff’s, this is from Whole Foods. I highl recommend using jar and not fresh jalapeños. There fresh ones mixed and blended might be too spicy.

  3. The ricotta cheese: I used whole milk ricotta cheese.

The Crostini’s:

I used these Isola Mini Bruschetta Rounds from Whole Foods, I found them in the fancier cheese section where they also keep their nuts, jams and crackers.

If you would much rather be socializing with your guests than be cooking upon their arrival, place a platter of these out and you will be well on your way to more mingling and less worrying.
