We are a big oatmeal household over here. Well actually we are a big oats house over here, to say I am obsessed with oat milk is an understatement. Anyways, If I had to pick, I would rather have a bowl of comforting healthy oatmeal that I know will keep me full for a longer period of time over a bowl of soggy cereal. Who is with my on that one!?
This Superfood Cinnamon Apple Oatmeal contains double the superfoods with chia seeds and flaxseeds, plus double the apples with honey crisp and golden delicious. When you add cinnamon, nutmeg, coconut oil and toasty walnuts to the mix the aromas coming from your kitchen will have everyone in your house wanting to wake up and smell the cinnamon apples.

Makes 2-4 Bowls of Oatmeal, INGREDIENTS:
2 Cups unsweetened vanilla almond milk
1 Cup rolled oats, old fashioned extra thick oats OR oats of choice
1/4 Cup maple syrup
1/2 Cup walnuts
1 TBSP chia seeds
1 TBSP golden flaxseeds, whole
1 TBSP coconut oil
1/2 of a honey crisp apple, diced
1/2 of a golden delicious apple, diced
1/4 TSP nutmeg
1 TSP cinnamon
Dice your honey crip apple and your golden delicious apple. Combine in one bowl, set aside.
Heat a pot over medium heat. Once hot add your coconut oil and melt.
Once coconut oil has melted, add your diced apples and cook for 2-3 minutes stirring frequently. Add your 1 TSP cinnamon and 1/4 TSP nutmeg and mix well to combine.
Add your 1 cup rolled thick oats, 1/2 cup walnuts, 1 TBSP chia seeds and 1 TBSP golden flaxseeds.
Next add your 2 cups unsweetened vanilla almond milk and your 1/4 cup pure maple syrup.
Mix all items together. Bring heat to low and simmer until mixture becomes thick, about 5-10 minutes.
When done, remove from heat, serve right away with extra apples, walnuts, chia seeds and flaxseeds on top if you would like and maple syrup on the side.
