Your snack time just got a whole lot better and trust me when I say you won’t be able to just eat one! These chewy peanut butter, chocolate and cherry granola bars are rich, sweet and so irresistible. You deserve every bit of goodness that comes with each bite!
These granola bars never tasted so good. They are made with all of the good stuff, they are nutty, sweet, chewy and mostly healthy! All you need are 8 simple whole food ingredients. These make for the perfect hearty snack at anytime of the day because they have the ability to get you full without a large dose of sugar.
They take an easy 15 minutes to make and will put those store bought bars to shame. Make these on the weekends or at the beginning of your week to have snacks for the whole week! If you need a afternoon pick me up, a mid-morning snack or you are in a hurry and need something on the go, problem solved! You will have these and can thank me later, because it’s better to have these handy and be prepared in case that hunger strikes.
My favorite part about these is that there is no baking required! Pop these babies in the fridge and within an hour or two they are ready to go. I am a big snack gal and I always need something on hand, I kid you not when I say these are my saving grace. Their wonderful salty peanut buttery taste with hints of sweetness from the chocolate and dried cherry pieces instantly cure any potential hangryness that could arise.
I love using the extra thick rolled oats from Bob’s Red Mill because you really get that oat flavor and texture as opposed to the finer roller oats. They make them really taste and look like a granola bar. When I think of a granola bar I think of a flavorful, chewy, sweet but not too sweet, oat-y combination. These bars provide exactly that! So, do yourself a favor and make sure to add these to your weekly meal prep or snack ideas because you my friend, absolutely deserve every bite of goodness that comes in each one of these bars.

Makes 10-15 Bars Depending on the Cut, INGREDIENTS:
2 and 1/2 Cups rolled old fashioned oats, Bob‘s Red Mill Extra Thick
1 Cup dried sweet cherries, chopped
1 Cup semi sweet mini chocolate chips
1/2 TSP pink Himalayan salt
1/2 TSP cinnamon
1 Cup Justin’s creamy peanut butter
1/2 cup honey
1/2 TSP vanilla extract
In a bowl mix the dry ingredients: 2 and 1/2 rolled old fashioned oats, 1 cup dried sweet cherries, 1 cup semi sweet mini chocolate chips, 1/2 TSP cinnamon and 1/2 TSP pink Himalayan salt. Mix well.
In another bowl, mix the wet ingredients: 1 cup Justine’s creamy peanut butter, 1/2 cup honey and 1/2 TSP vanilla extract. Whisk until smooth.
Once smooth, pour the went ingredients (peanut butter mixture) into mixed dry ingredients. Using a spatula, mix until all ingredients are mixed well and there are no dry oats left.
Transfer to an 8x8 or 9x9 square pan. Use your spatula to press down the edges. Once edges are crisp and clean continue using your spatula or switch to a measuring cup to press the middle parts down and smooth so everything is even.
Place in the fridge to cool for at least an hour. Once done, remove from pan and cut into bars.
Serve immediately and store the rest in fridge in an air tight container.
