Ahi Tuna, Avocado and Cucumber on Grilled Sourdough Toasts

I am feeling major summertime vibes over here. These toasts are bright in color, contain fresh ingredients and are oh so flavorful. Incorporating ahi tuna with cucumbers and cubed avocado is a new way to enjoy avocado toasts.

Ingredients

For the Ahi Tuna, Avocado and Cucumber Toasts: 

For the Sauce/Marinade: 

  • 2 TBSP soy sauce
  • 1 TSP sesame oil
  • 1 TBSP rice vinegar
  • Fresh lime juice from half a lime
  • 1/4 TSP grated ginger
  • 1/4 TSP salt
  • 2 TBSP honey

Instructions

  1. Make your sauce/marinade. Place all ingredients in a bowl and whisk well. Set aside.
  2. Chop your sesame crusted smoked ahi tuna and place in a bowl. Dice your cucumbers and place in the same bowl. Cube your avocado and place in the bowl as well.
  3. Pour your marinade over your ahi tuna, cucumbers and avocado. Mix well. Place in the fridge to cool.
  4. Cut the crusts off your sourdough bread and shape the toasts into rectangles.
  5. Heat a grill pan over medium heat. Butter one side of each of the toasts and place the butter side down on the heated pan. Toast over medium heat until the grill marks and the toast are nice and golden brown. Then, flip to the other side And repeat. Continue this process until both sides of each toast are grilled and golden brown. NOTE: No need to butter both sides, there will be butter on the pan from the first side you put down. Also, if you do not want to do the grilling, you can just toast them in the toaster if you would like.
  6. When all toasts have been toasted, remove your ahi tuna mixture from the fridge. Using a spoon, scoop the mixture from the bowl and place on top of your toasts.
  7. Garnish with furikake seasoning on top.
  8. ENJOY!
