Banana Split Kabob Board

Do you love banana splits, but hate when the ice cream melts and then sooner or later you find yourself in a sticky sweet mess? Me too! My banana split kabob board can solve that problem!

Ingredients

  • 2-3 Bananas, cut in thicker slices
  • 8 Strawberries, with the top cut off
  • 8 Fresh pineapple chunks (I purchase already cut ones for faster prep and to make things easier)
  • 1 Jar of maraschino cherries
  • Coconut, shaved
  • Peanuts, salted
  • 5 Oz. dark chocolate wafers, melted (I used Ghirardelli brand) ** I melted in a pot, then transferred to a squeeze bottle, it was much easier to drizzle over the top this way and also makes for a prettier presentation **
  • Bamboo skewer sticks
  • 1 Can of whipped cream

Instructions

  1. Slice bananas and set aside. Wash the strawberries and slice the tops off. Chop your peanuts. Place them in separate bowls.
  2. Take a few cherries out of the jar and carefully pat them down with a paper towel to get rid of some extra juices. I do this step because I do not want red cherry juices dripping all over the board and the other fruits. It makes the process cleaner.
  3. To construct your kabobs, start by skewering one banana slice, then a pineapple, then a strawberry, followed by a cherry and then another banana. Repeat this process until you have your desired amount of kabobs. Set them up on your board or plate as you would like.
  4. In a non-stick pot over medium to low heat, melt your dark chocolate wafers. Once they are all melted, remove pot from heat. Once the chocolate has cooled a bit (stir frequently to ensure that the chocolate is not hardening) transfer to a squeeze bottle, then place the top on.
  5. Drizzle your melted chocolate from the squeeze bottle over your banana split kabobs. Immediately sprinkle your coconut shavings and peanuts over the top of the kabobs and chocolate that is on your board or plate.
  6. Garnish the board with a few extra cherries and whipped cream piles that have some open spots.
  7. Serve immediately or place in the fridge for later. If you are consuming later, I would wait to add the whipped cream until right before serving.
