Caramelized Onions and Roasted Garlic Mashed Potatoes

Ingredients

  • 2 Yellow onions, sliced in half moons and caramelized
  • 4 TBSP olive oil, divided
  • 1/2 TSP coarse salt
  • 4 Russet potatoes
  • 1 Garlic bulb, roasted
  • 1 Cup Full fat Oat milk
  • ¼ Cup butter, sliced + extra for the top
  • 1 TSP salt
  • ½ TSP black pepper
  • Fresh parsley, optional for garnish

Instructions

For the Roasted Garlic: 

  1. Preheat your oven to 350 degrees.
  2. Cut the top of your garlic bulb off.
  3. Pour 2 TBSP olive oil over the top of your garlic cloves and make sure the oil gets in all of the nooks and crannys. Sprinkle your coarse salt over the top.
  4. Place it in a foil and bring all ends to the top and crinkle together to close tight.
  5. Place in the oven for 1 hour minutes or until the garlic cloves are golden brown and tender.
  6. When done, remove from heat and let cool. Set aside until ready to add to the potatoes.

For the Caramelized Onions: 

  1. Cut the ends off of your onion. Peel the skin off and then cut the onion in half. Slice them into half moons. Repeat with your second onion.
  2. Heat a pan over medium heat, add 2 TBSP olive oil. Swirl around the pan to coat. Add your onions and cook over medium to low heat for about 35 minutes or until the onions are golden brown and caramelized.
  3. When done, set aside until ready to add to the mashed potatoes.

For the Caramelized Onion and Roasted Garlic Mashed Potatoes: 

  1. Peel each of your potatoes and then cut them into cubes.
  2. Heat a pot over medium heat, add a little bit of salt. Bring to a boil.
  3. Once boiling, add the potatoes. Cook over medium heat for 15 minutes or until potatoes are tender.
  4. Once the potatoes are tender, drain and place in another large bowl.
  5. Add oat milk, a pinch of salt, a pink of black pepper and butter. Using a potato masher or a electric hand mixer, mix and mash your potatoes.
  6. Once mashed, add in your caramelized onions and squeeze out your roasted garlic from the bulb into the potatoes. Using your masher or electric hand mixer, mix again to combine. Add additional salt and pepper to taste if desired.
  7. Serve right away and garnish with parsley or extra butter.
