Sweet and Savory Raisin Apple Pecan Stuffing

You heard that right! This is a sweet and savory stuffing all in one dish. Here you will get the best of both worlds! When this dreamy dish gets baked it creates a thanksgiving aroma in your kitchen unlike any other.

Ingredients

  • 1 Loaf raisin pecan bread from whole food OR cinnamon raisin bread, cut in cubes and at least a day old
  • 1 Gala apple or honey crisp apple, diced small
  • 3/4 Cup celery, sliced
  • 1/2 Cup yellow onion, diced small
  • 1 TBSP minced garlic
  • 1 TSP fresh Rosemary, minced
  • 2 Eggs
  • 1 and 1/2 Cups chicken broth
  • 1 TSP apple seasoning OR cinnamon sugar (mix 1 TSP cinnamon and 1 TSP white sugar and mix, then scoop 1 TSP of the mixture) + more for sprinkling ontop if desired
  • 1/2 Cup dried cherries OR raisins if you want extra raisins
  • Salt and Pepper to taste

Instructions

  1. Bread should be 1 day old. Make sure to cut your bread in cubes ahead of time.
  2. Wash and dry your celery, slice and place in a bowl and set aside.
  3. Wash your apple and dice. Set aside.
  4. Dice your yellow onion and set aside.
  5. Finely mince your fresh Rosemary and set aside.
  6. Heat a pan over medium heat. Add 2 TBSP olive oil. Once hot add you onion and garlic cook 2-3 minutes until fragrant and onions are translucent. Season with salt and pepper and mix.
  7. Add your celery, apples and fresh Rosemary. Season will a little more salt and pepper and mix. Cook for 5 minutes then remove from heat.
  8. In another bowl whisk together, chicken broth, eggs and apple seasoning or cinnamon sugar.
  9. Place your bread cubes in a large bowl. Add you dried cherries and your apple and celery mixture. Slowly pour your chicken broth mixture over the bread, stopping half way through to mix if needed. You want the bread to soak up the mixture as you are pouring. You do not want it to be too soggy.
  10. Once mixed, place in a baking dish. Cover and Bake at 400 for 20 minutes.
  11. Garnish with extra rosemary leaves and apple seasoning if desired.
