20 Minute Sheet Pan Fajitas

You might be surprised on how easy it is to make these sheet pan fajitas. Slice,season and bake! Literally, that’s it. You can enjoy the sound of them sizzling while they bake and you will have a full meal plus leftovers (maybe) within 20 minutes! During that 20 minutes you can also prepare all of your favorite fixings or salad toppings and warm your tortilla‘s! So, by the time your sheet pan fajitas are ready to serve hot and right out of the oven, everything else will be done as well and those hungry tummies will be filled in no time!

The thing I love about this meal is that it is both healthy and filling. It is packed with protein, the good kind of fats, vegetables and the option to keep the carbs in or cut them out. It covers some of main nutritional aspects.

Some of our favorite fixings in our household include:

  • Shredded lettuce
  • Diced tomato
  • Sliced avocado
  • RightRice from Whole Foods
  • Sour Cream
  • Refried beans
  • Lime wedges
  • Cilantro Leaves

You can customize and include your favorite fixings to your liking and no matter how you customize them these are guaranteed to be a hit!

20 Minute Sheet Pan Fajitas

If you have 20 minutes, then you have time to make these sheet pan fajitas for yourself or your family and friends! They are easy, mess free, require minimal clean up and not to mention they are extremely appetizing.

Ingredients

For the Fajitas: 

  • 4 Chicken breasts, sliced
  • 1 TBSP Fajita seasoning on chicken, 1/2 on veggies
  • 1 Red bell pepper, sliced
  • 1 Green bell pepper, sliced
  • 1 Orange bell pepper, sliced
  • Half of a yellow onion, sliced in half moon
  • Flour tortillas (optional)
  • 2 TBSP olive oil, divided
  • Homemade fajita seasoning,recipe to follow below (optional)

For the Fajita Seasoning:

  • 2 TSP chili powder
  • 1/2 TSP cumin
  • 1/2 TSP paprika
  • 1 TSP salt
  • 1 TSP sugar
  • 1/2 TSP onion powder
  • 1/2 TSP garlic powder
  • 1/4 TSP black pepper
  • 1/4 TSP cayenne pepper
  • 1/4 TSP parsley flakes
Instructions
  1. Prepare a baking sheet with non-stick spray and pre-heat your oven to 400 degrees.
  2. Make your homemade fajita seasoning if you are using my homemade seasoning vs. store bought. Mix all ingredients for the seasoning in a bowl and set aside.
  3. Slice your chicken into stripsand place in a bowl. Set aside.
  4. Slice your red pepper, greenpepper, orange pepper and onions and place in another bowl OR the same bowl as the chicken if you would like to eliminate dishes.
  5. If your chicken and vegetables are not in the same bowl, place in the same bowl. Pour 2 TBSP olive oil the bowl and then 1 TBSP add a time add your fajita seasoning. Add as much or as little seasoning as you would like. Mix well so all vegetables and chicken are coated with olive oil and seasoning. Once done, transfer your seasoned chicken and vegetables to your prepared baking sheet.
  6. Bake at 400 degrees for 20 minutes.
  7. While fajitas are baking, prepare your fixings. Shred your lettuce, dice your tomato, warm your tortillas and refried beans and make your rice.
  8. When fajitas are done, remove from heat and serve right away from the pan with your prepared fixings.
  9. ENJOY!
