5 Ingredient Tilapia Foil Packets that are Easy Like Sunday Morning

Truth be told, we are a Salmon household. That is our go to type of fish for seafood dinners, as it is for most. If you are looking to change it up Tilapia is a great choice! Tilapia is packed with protein and is an excellent source of vitamins and minerals. This dish is so light, refreshing and vibrant it will appeal to any crowd.

In a perfect world, we would make a full well balanced meal every single night for our families combined with perfect weather, while we sit outside in our backyards and have a glass of wine in hand. But, more often than not, that is not the case with the thousands of other things we typically have going on. This recipe will help you when you need a quick, easy and minimal ingredient list to lean on by just using common ingredients in your home.

Ingredients
  • 3 Tilapia Filets, rinsed and patted dry
  • 1-2 Shallots, thinly sliced
  • 1 Large tomato or 3 small tomatoes, chopped
  • 1 Spoon full of minced garlic
  • 2 TBSP olive oil
  • 2-3 Sprigs fresh thyme
Instructions
  1. Pre-heat oven to 450 degrees.
  2. Prepare baking sheet with and foil packets. Tear off foil and crinkle the sides up and create a boat like packets. Spray the inside of each packet with non stick spray to prevent the fish from sticking.
  3. Rinse the tilapia filets under cold water and pat dry with a paper towel. Season all sides with salt and pepper and set aside.
  4. Slice shallots, chop tomatoes and take thyme leaves off the their sprigs.
  5. In a large bowl, mix olive oil, shallots, garlic, tomatoes and fresh thyme sprigs.
  6. Place 1 tilapia filet per individual prepared packet and place on baking sheet.
  7. Scoop spoonfuls of the mixture and put over each individual filet. distribute evenly. Make sure all sides of the fish are covered with the mixture.
  8. To close the packets, pinch together the top and roll down, then close the sides.
  9. Bake at 450 degrees for 11 minutes. When done, remove from heat.
  10. ENJOY!

The ingredient list is missing lemon slices, shallot and garlic.
