Air Fryer Baby Lamb Chops Lollipops with Whipped Feta and Red Potatoes

Fragrant rosemary and garlic mixed with tangy lemon juice, shallots, olive oil, red wine vinegar and spices make these baby lamb chops so so flavorful and succulent. I am drooling just writing this. Between the mix of the Greek marinated chops, whipped feta and seasoned potatoes you can truly enjoy the delicious Mediterranean taste of the dish.

I love this dish because of its simplicity. It is so simple and easy to make, yet it looks fancy! It is truly an easy way to impress your family during the week/weekend or your dinner guests for when you host. The baby lamb can easily get made in minutes, the whipped feta consists of mixing all ingredients and blending and the roasted red potatoes do take the longest, however the oven does all the work for you!

I don’t even know what to say right now....when they say everything is betta with a lotta feta, they ain’t wrong! Take your feta game to a whole new level with this whipped feta recipe. If you’ve never had whipped feta, I promise you it will be life changing. It was for me! The creamy texture is unbelievable and when mixed with other spices and herbs it is unlike anything else!

Crumbled feta is so delicious, but also such a pain. It is a delicious pain if you ask me. If you try to put it on any food items it rolls right off, if you try to stick your fork in it, it crumbles and just falls apart and honestly, no one is going to be taking spoonfuls of feta crumbles with their meal. Am I right or am I right? *Whipped Feta Enters the Room* Ta-da! The answer to solve all of those delicious problems.

The whipped feta in this dish is perfect for dipping, swirling and spreading onto your potatoes and rosemary baby lamb chops. But, in all honesty you can slather it onto everything and anything and it will not disappoint. You will have left overs, so make sure to have some toast and crudités handy because you will want it! Ugh, I am sitting here just thinking about how fabulous this is in so many ways, I can’t even take it! Now, if you‘ll excuse me, I have some whipped feta that needs my attention.

Ingredients

For the Rosemary Garlic Air Fryer Baby Lamb Chop Lollipops:

  • 1 Lb. baby lamb chops
  • 1/4 Cup olive oil
  • 1-2 TBSP red wine vinegar
  • 1 TBSP fresh rosemary, finely chopped
  • 1 TBSP fresh garlic, finely chopped
  • Lemon zest from half a lemon
  • 1/4 TSP black pepper
  • 1/2 TSP salt

For the Whipped Feta: 

  • 1 8 Oz. block feta cheese, crumbled
  • 1/2 Cup sour cream,
  • Fresh lemon juice from half a lemon
  • 1 TSP dried oregano
  • 1 TBSP fresh garlic
  • 1/4 TSP black pepper
  • 1/2 TSP salt
  • 1/2 TSP red pepper flakes

For the Roasted Red Potatoes:

  • 5 Red potatoes, cut in wedges
  • 2 TBSP olive oil
  • 1/2 TSP salt
  • 1/4 TSP black pepper
  • 1-2 TSP Italian seasoning
  • 1 TBSP fresh garlic, finely chopped
Instructions

For the Rosemary Garlic Air Fryer Baby Lamb Chop Lollipops:

  1. If your baby lamb chops are not cut, cut them into individual pieces. Set aside.
  2. In a bowl, make your marinade. Combine 1/4 cup olive oil, 1-2 TBSP red wine vinegar, 1 TBSP fresh rosemary, 1 TBSP fresh garlic, lemon zest from half a lemon, 1/4 TSP black pepper and 1/2 TSP salt. Whisk until combined.
  3. Place baby lamb chops in a dish or bowl and pour marinade over them. Place in the fridge to soak in the spices and flavors for a minimum of 30 minutes. But, the longer the better.
  4. When ready to air fry, preheat air fryer to 380 degrees. When done preheating, spray the bottom of your air fryer with non stick spray.
  5. Place your marinaded baby lamb chops in the air fryer. Spray the tops of them with non-stick spray. Air fry them at 380 degrees for 8-10 minutes, flipping half way through.
  6. When done, remove them from your air fryer. Service right away with roasted red potatoes and whipped feta.
  7. ENJOY!

For the Whipped Feta:

  1. Add all ingredients to your food processor and blend until smooth and creamy.
  2. When done, place in the fridge to cool until ready to serve.
  3. ENJOY!

For the Roasted Red Potatoes:

  1. Prepared a baking sheet with parchment paper and non-stick spray. Set aside.
  2. Preheat your oven to 425 degrees.
  3. Wash and dry your potatoes. When dried cut them into wedges and place in a bowl.
  4. Add 2 TBSP olive oil, 1/2 TSP salt, 1/4 TSP black pepper, 1-2 TSP italian seasoning And 1 TBSP fresh garlic. Mix well.
  5. Place your seasoned, prepared potatoes on your prepared baking sheet.
  6. Bake at 425 degrees for 40 minutes.
  7. When done, remove from heat and serve with air fryer baby lamb chops and whipped feta.
  8. ENJOY!
