Banana Cinnamon Toast Crunch French Toast

Make all of your french toast dreams come true with this Banana Cinnamon Toast Crunsh French Toast recipe!

Be right back, I need a minute because I am currently dying over this Banana Cinnamon Toast Crunch French Toast tray. Slices of fresh banana pressed into the bread and then coasted with crushed cinnamon toast crunch! Like WOAH!

When one thinks of french toast, they think of how comforting, rich and delectable it is. Especially, when it is drizzled with warm maple syrup. And yes, no doubt about it, that in itself sounds so mouthwatering. But, why take the classic recipe route when you can enhance it with a mixture of cinnamon and bananas as well.

I wanted to deliver a super fun and easy family breakfast or brunch recipe that is suitable for any age. It is a recipe that is also ideal for any situation, whether you and your significant other are having a breakfast date, your family is in town and staying at your house or you need to feed tiny humans. This recipe will not disappoint and it will be your new go to recipe that everyone will love!

There are two important things that I wanted to cover when making these:

  • Use day old bread if possible: Using day old bread will absorb the egg mixture better and in turn, make for better french toast. I bought a loaf of bread, but I waited about a day or two until I used it. So, make sure to buy ahead of time for use later.
  • Cook over Low Heat: Make sure to cook over lower heat. Slow and steady wins the race. If you have the temperature on high or even medium, the Cinnamon Toast Crunch pieces will burn easily and quickly and the middle will not be cooked. So, I had my temperature a little above the lowest setting. You do not want it all the way down to the lowest point, so just slightly above that will be perfect.
  • Buy a whole Loaf of Bread as Opposed to Pre-Sliced: I like to buy the loaf as a whole and not pre-sliced. I like to cut them myself so I am the one who determines the thickness. In my opinion, pre-sliced bread is too thin for my liking. But, if that is what you prefer, that works too!

Ingredients
  • 1 Loaf of white bread, a day old and not pre-sliced (I was able to cut about 10 slices)
  • 4 Cups Cinnamon Toast Crunch cereal, crushed
  • 2 Fresh bananas, sliced
  • 6 Eggs, whisked
  • 1/2 Cup almond milk
  • 1/2 TSP ground cinnamon
  • 1 stick or 1/2 cup of Butter, sliced
Instructions
  1. Slice your loaf of bread into about 10 slices. Set aside. Slice your two bananas. Set aside.
  2. Pour Cinnamon Toast Crunch into a ziploc bag and crush with a rolling pin. Pour into your dish of choice. Make sure it’s big enough to fit the toast slices in.
  3. In separate dish, that is also big enough to fit your toast slices in, whisk together eggs, milk and cinnamon. Set aside.
  4. Cut your butter into 10 slices, set aside.
  5. To cook, start by taking a slice of bread and press 4-5 banana slices in it. Press them in deep enough so they don’t fall out, but not too deep where you push it through the break and make a hole.
  6. Next, drench both sides of the toast in the egg mixture and make sure they are fully coated.
  7. Coat both sides in the crushed Cinnamon Toast Crunch. Make sure all areas are covered. Carefully, place on a baking tray.
  8. Repeat this process with the remaining slices.
  9. When all are coated, heat a pan over low heat, add one butter slice and melt. Place one coated french toast slice in the pan banana side down first. Cook for 2-3 minutes or until golden brown, flip and cook another 2-3 minutes on the other side. Remove from heat and let cool.
  10. Repeat this process with all toasts until they are all cooked.
  11. If desired, slice them in half triangles. Serve with berries, syrup or whipped cream.
  12. ENOJY!

The ingredient list is missing lemon slices, shallot and garlic.

Can I do this in a slow cooker instead of the oven?
