Christmas Tree Calzones

I love calzones, they remind me of those individual hot pockets I used to heat up right when I got home from school when I was a kid. The pizza hot pockets were hands down the best. Soft yet crispy dough filled with savory sauce, melty cheese and tender proteins. I always gobbled them right up.

Whether you are looking for a fun weekend activity, a festive treat to bring to a holiday party or you are simply just craving calzones, these will satisfy any of those needs. They are considered easy to make because they are made with pre-made pizza dough. Just roll it out, cut and fill!

I will let you in on a little secret on what makes these cute calzones so delicious...drum roll please...it is my Pretty Plate Pizza Sauce and the three cheese filling! I promise they are both beyond easy to make as well too! Once you have those covered, just stuff with all of your favorites! Mine are spinach, mushrooms and turkey pepperoni. My Pretty Plate sauce not only is good for the filling, it’s great to serve as a dipping sauce on the side after the calzones are done.

One other thing that makes these beyond tasty, it’s the italian seasoning that is sprinkled on top to make the christmas trees “green”. It is like the icing on the cake. I use Morton & Bassett. This is my all time favorite Italian seasoning. It smells just as heavenly as it tastes. It’s so savory and the flavor is unlike any other one I’ve had before.

Filling them can be tricky because you do not want to over fill and risk tearing the dough or spilling the sauce out of the sides. I will say less is more, You want to be able to secure them nice and tight. That’s why I also love using my sauce for dipping and serving, I am a big sauce gal and a little extra sauce never hurt anybody. Ya feel me?

When it comes to closing the calzones, you do not need egg wash for the edges.  You do not want it wet as it will make it hard to stick together. You can just lay the cut dough evenly on top after it is filled and press down. I like to start from the bottom and work my way up.

Ingredients

For the Pizza Sauce:

  • 1/2 TBSP olive oil
  • 1 TBSP minced garlic
  • 1 15 oz. can tomato sauce
  • 1 12 oz. can tomato paste OR 2 6 oz. cans
  • 1/2 - 1 TBSP dried Italian seasoning
  • 1 TBSP sugar
  • 1/4 cup water
  • Pinch of salt
  • 1/4 TSP pepper

For the Christmas Tree Calzones:

  • Christmas Tree cookie cutter
  • 2-3 pizza dough rolls
  • Pretty Plate Pizza Sauce
  • ½ Cup ricotta cheese
  • ½ Cup mozzarella cheese
  • ½ Cup grated parmesan cheese
  • 2 Eggs, divided
  • ¼ TSP salt
  • ¼ TSP black pepper
  • Mushroom, diced
  • Spinach, thinly sliced
  • Turkey pepperoni
  • Italian seasoning for the tops (Morton & Bassett brand)
Instructions
  1. Preheat your oven to 400 degrees. Prepare a baking sheet with parchment paper and non-stick spray. Set aside.
  2. Finely dice your mushrooms, set aside. Thinly slice your spinach, set aside. Mince your fresh garlic, set aside. Shred your rotisserie chicken, set aside.
  3. Make your pizza sauce. Start by heating ½ TBSP olive oil in a pot. Add your minced garlic and cook 2-3 minutes over medium heat until fragrant. Add in remaining ingredients in a pot. Mix well and cook until warmed for about 5-10 minutes. When done, remove from heat.
  4. In a bowl, mix ricotta cheese, mozzarella cheese, parmesan cheese, 1 egg, salt and pepper. Set aside.
  5. Roll out your pizza dough. Using your cutter of choice, cut dough in holiday shapes. Cut as many as your would like.
  6. To fill, spread some of your cheese mixture onto the shape filling the middle and staying clear from the edges. Do not overfill. I would do about 1 TBSP. Top with some pizza sauce, mushrooms, spinach and chicken.
  7. Place another piece of cut dough the same exact shape over the top. Pressing down on the edges with a fork, seal the calzone.
  8. Whisk your other egg in a bowl. Using a basting brush, baste the top and edges with the egg wash and then sprinkle with extra dried italian seasoning.
  9. Continue this process until all calzones are filled. Place prepared calzones on your prepared baking sheet.
  10. When ready, bake at 375 for 15-17 minutes or until golden brown.
  11. Serve with extra pizza sauce on the side.
  12. ENJOY!

Can I do this in a slow cooker instead of the oven?
