Firecracker Turkey Burger Skewers

Upon your initial bite, you’ll notice that first they‘re spicy, then they’re sweet. I am not lying when I say that this firecracker sauce is out of this world. It has a perfect combination of spice and sweet and it is great for drizzling, dipping and drenching!

Is it game day? Are you hosting? Or are you looking to change up that weeknight or weekend dinner for something a little more fun? All of the above, well how about that! Perfect! This recipe is ideal for all and any of those occasions.

Anything that is mini and served on a stick is automatically considered adorable. These little bites of fresh produce, savory patties with cheese and a sauce that turns up the heat are just simply irresistible. They are the whole package, what more could you want!?

When you eliminate the bun and replace it with a sauce that will rock your world, you will completely forget there was supposed to be a bun included in the first place. This firecracker sauce is the main show stopper and she is not afraid to show it.

This recipe is a beyond easy way to impress your family and friends at anytime of the year, grilling season or not. I like serving these with sweet potato waffle fries on the side. But, I could also recommend: fruit salad, potato salad, chips or even your favorite vegetable.

Firecracker Turkey Burger Skewers

No bun, no problem! These adorable mini Firecracker Turkey Burger Skewers are low carb, packed with flavor and make for an easy grab and go item. When you complete these skewers with all of the fixins, you will completely forget there was even a bun!

Ingredients

For the Turkey Burger Skewers: 

  • 2 Lbs ground turkey 93/7%
  • 1/4 Cup Italian seasoned bread crumbs
  • 2 TBSP worsechire sauce
  • 1 TBSP minced dried onions
  • 2 TSP coarse dijon mustard
  • 1-2 TSP salt
  • 1/2 TSP black pepper
  • Smoked Mozzarella cheese slices or your choice of cheese, cut in quarters
  • Lettuce, cut in cubes
  • Grape or cherry tomatoes, whole
  • Pickles, sliced

For the Firecracker Sauce:

  • 1 cup franks red hot sauce
  • 1/2 cup sambel oelek sauce
  • 1 cup brown sugar
  • 1/2 -1 TSP red pepper flakes
Instructions
  1. In a bowl, whisk all ingredients to make the firecracker sauce. Reserve 1/2-1 cup for serving with and set the rest aside.
  2. Prep your skewer items: wash your tomatoes and pat them dry. Place them in bowl and set aside. Wash your lettuce and cut it into smaller cube pieces. You can keep your pickles in the container it comes in or you can drain them and place them in another bowl. Place all items in the fridge until you are ready to construct your skewers.
  3. Make your mini turkey burger patties: combine 2 lbs ground turkey 93/7%, 1/4 cup Italian seasoned bread crumbs, 2 TBSP worcestershire sauce, 1 TBSP minced dried onions, 2 TSP coarse dijon mustard, 1-2 TSP salt and 1/2 TSP black pepper in a bowl. Using your hands, mix well to combine.
  4. To form the patties, use a 1 TBSP measuring spoon and scoop out the mixture. Place the scooped mixture in your hand and roll into a ball. Continue this process until all mini patties are made.
  5. Spray a pan with non stick spray, heat 1 TBSP olive oil in your pan over medium heat. Once pan become hot, add as many mini turkey patties as you can fit and cook about 3-5 minutes per side or until they are no longer pink. When cooked, remove from heat and place in a bowl. Repeat this process until all patties are cooked.
  6. Once all mini patties are cooked, pour the firecracker sauce over the patties to coat.
  7. Once they are coated, heat another pan over medium to low heat and spray with non stick spray. Add your coated firecracker patties and place one little cheese square over each one. Place a lid on top of the pan and melt your cheese, about 1-3 minutes. Once melted, remove from heat immediately.
  8. To construct the skewers: first skewer your firecracker turkey patty with cheese, followed by a lettuce chunk, 2 pickle slices and last, one tomato. Continue this process until all skewers are made.
  9. Serve immediately with reserved sauce on the side.
  10. ENJOY!
