Ingredients

For the Greek Feta Meatballs and Mixed Vegetables: 

  • 1 Lb. ground turkey
  • 1 egg
  • ½ Cup italian style bread crumbs
  • ¼ Cup red onion, minced
  • 2 TBSP crumbled feta
  • 1 TBSP parsley, minced
  • 1 TBSP mint leaves, minced
  • 4 cloves garlic, minced
  • ½ TSP dried oregano
  • 1 TSP salt
  • ¼ TSP black pepper
  • 2 Red bell peppers, sliced
  • 2 Green bell peppers, sliced
  • 1 Red onion, sliced in half shape moons

For the Cucumber Tzatziki Sauce: 

  • 2 5.3 oz. small tubs Greek yogurt, 2% milk fat
  • 1 TBSP fresh garlic, minced
  • 1 TBSP olive oil
  • Fresh lemon juice from one full lemon
  • 1 TSP white vinegar or rice vinegar
  • 2 TBSP fresh dill, minced
  • 1 TSP salt
  • 1/4 TSP black pepper
  • ½ Cup cucumber, diced

For the Lemon Pepper Orzo:

  • 16 oz. Orzo
  • 2 TBSP olive oil
  • Zest from one lemon
  • Lemon juice from one lemon
  • ½ TSP black pepper
Instructions
    1. Start by making your tzatziki sauce. Prep and combine all ingredients in a bowl and whisk well. Place in the fridge to cool while you prepare the other items.
    2. Preheat your oven to 400 degrees. Prepare a baking sheet with parchment paper and set aside.
    3. Slice your red bell pepper, green bell pepper and toss them in some olive oil, salt and pepper to your liking then dump your vegetables on your prepared baking sheet.
    4. In another bowl, add your ground turkey, egg, bread crumbs, feta cheese, parsley, mint leaves, oregano, garlic, red onion, salt and pepper. Using your hands, mix everything together.
    5. Using your hands, make about 1-2 inch meatballs and nestle and spread them out on your baking sheet with the veggies.
    6. Bake in the oven at 400 degrees for 18 minutes or until the meatballs are fully cooked.
    7. While the meatballs and veggies are cooking, prepare your orzo. Place a pot of salted water over high heat. Once boiling, add your orzo and cook for about 11 minutes or until al dente.
    8. When it is al dente, drain and place cooked orzo in a bowl. Add your lemon zest, lemon juice. Olive oil and black pepper. Mix well.
    9. When meatballs are done, meal prep and place your desired amount of orzo, vegetables and meatballs in a meal prep container or you can serve right away in a bowl. Serve with your prepared tzatziki sauce.
