Brace yourself for the most epic well rounded dish that will have your taste buds dancing with delight and leave you craving more. These meatballs are so plump, crispy on the outside and juicy on the inside. Rolled with ground turkey meat, herbs, creamy feta cheese chunks and more, then baked to perfection with a fresh vegetable mix, this sheet pan meal can only be described as: magnificent.

Experience the ultimate meal prepping made easy with this Mediterranean masterpiece. While it may seem intricate, you will find that the preparation is rather simple! Most of the prep involves tossing ingredients together in a bowl and mixing, with half of the cooking done on a single sheet pan. This delectable meal features four components: Greek feta meatballs, lemon pepper orzo, a fresh vegetable mix, and cucumber tzatziki sauce. Perfect for individuals looking to plan their meals for the week, feeding a family or for hosting larger gatherings, this versatile dish allows for customization, ensuring everyone can enjoy it just the way they like.

One of the highlights of this dish is its versatility, allowing for easy customization. Below, I'll share some simple swaps and additional serving suggestions:

What other options are there?

  • Substitute the orzo with your preferred rice variety, tri-color pearl couscous (a personal favorite), or quinoa.
  • Enhance the dish with your favorite olives, capers, or artichokes.
  • Pair it with warmed pita bread on the side. Use it to create stuffed pita meatball sandwiches or as a delicious dipper for the flavorful sauces.
  • Add in produce such as: tomatoes, spinach, or marinated mushrooms.
  • Hummus! Scoop a dollop of your favorite hummus for added textures, flavors and sauces.

Can I make this as an appetizer and not for a full meal?

Absolutely! I strongly suggest serving the meatballs with just the cucumber tzatziki sauce or on their own for your upcoming book club, birthday bash, holiday gathering, or sports event. This versatile choice is perfect for both buffet-style setups and individual servings, offering your guests a tasty addition to their plates. If you go this route, consider doubling the portions to accommodate the number of guests you'll be hosting.
