Half and Half Air Fryer Chicken Tenders

I absolutely love these half and half chicken tenders. This recipe is easily one of my go to recipes on a weekly basis. I love using my air fryer because you still get the crispness of oil frying with little to no oil, they are so much healthier without compromising the taste and texture.

Not only are these so fresh and juicy, but they are also so easy to make with a few simple ingredients! I love dipping them in my favorite sauces, cutting them up and adding them to my salads during the week or even throwing together a delicious chicken sandwich. When it comes to these guys, the meal options are endless. Make these at the start of the week to ensure you have a few different meals for the next couple of days.

The reason they are called half and half chicken tenders is not because they are made with half and half creamer, a little secret: they aren’t! But, because I incorporate half healthy ingredients such as almond flour and gluten free bread crumbs and mix it in with regular everyday ingredients such as all purpose flour and regular Italian seasoned bread crumbs. So, the two main elements that make up the coating is half healthy and half regular. So, you could say these are healthyish between the mix of air frying which eliminates the oils, the almond flour and the gluten free bread crumbs.

When it comes to the products I used in this recipe, I highly recommend sticking to the brands in the photo above, see some of my notes below on the three main ones that make up the coating:

  • Cento Italian seasoned bread crumbs are by far the most flavorful I’ve ever had. I've tried a few different brands and others just do not compare. Upon opening the package you can already smell the aroma of the Italian seasoning and it’s heavenly. So, Cento is the way to go! It will really bring out the flavor in the tenders. I am a big Whole Foods gal. But, unfortunately they do not carry the Cento brand. So, you can get these from jewel, mariano‘s or a comparable store.
  • These gluten free bread crumbs are the best! They have large crumb pieces that when air fried help with the extra crunch. To be honest, they do not have a ton of flavor, which is why I mix them with the Cento Italian seasoned bread crumbs. The mix between the two Is perfect!
  • Bob‘s Red Mill Super fine almond flour is also one of my favorites. It's so light, fluffy with a hint of sweetness. When mixed with all purpose flour, they make for a perfect match!

Ingredients

For the Half and Half Air Fryer Chicken Tenders:

  • 2 Lbs chicken tenderloins
  • ½ Cup almond flour
  • ½ Cup all purpose flour
  • 1 and ½ Cup italian seasoned bread crumbs (cento brand)
  • 1 and ½ Cup gluten free Panko bread crumbs
  • 4 Eggs whisked
  • 1/2 TSP salt
  • 1/2 TSP pepper
  • Non-stick spray or olive oil spray

For the Truffle Buffalo Dipping Sauce (Truffalo Sauce):

  • ½ Cup new primal Buffalo sauce
  • 2 TSP new primal Buffalo seasoning
  • 2 TBSP truffle oil
  • 2 TSP honey

For the Honey Mustard Dipping Sauce: 

  • 1/2 Cup 5% greek yogurt
  • 1/4 Cup raw honey
  • 1/4 Cup new primal coarse dijon mustard
  • 1 TSP white vinegar
  • 1/4 TSP paprika
  • 1/4 TSP salt
  • 1/4 TSP black pepper
  • 1/4 TSP garlic powder
Instructions

For the Half and Half Air Fryer Chicken Tenders: 

  1. Sift your all purpose flour into a bowl. This step is not necessary, it just helps break up any potential clumps. Next, add in your almond flour, salt and pepper and mix well to combine all. Transfer to a plate.
  2. In the same bowl you used for the flour or another bowl, add your Italian seasoned bread crumbs and your gluten free bread crumbs. Mix well and transfer to another plate.
  3. Whisk your 4 eggs in a bowl and transfer to a plate.
  4. To begin coating your chicken tenders start by coating them completely in the flour mixture, then drenching them in the whisked eggs, then coating them in the bread crumb mixture. Place on a separate plate or cutting board. Continue this process until all of your tenders are coated.
  5. Preheat your air fryer at 400 degrees.
  6. When done preheating, spray the bottom of your air fryer with non-stick spray. Add 4-5 tenders to your air fryer basket and then spray the tops with olive oil spray. Air fry your chicken tenders at 400 degrees for 10 minutes. Make sure to flip them over at the halfway point and then spray the tops again with your non-stick or olive oil spray.
  7. Serve immediately with the truffalo and Greek honey mustard dipping sauces. Store any leftovers in an airtight container in the fridge.
  8. ENJOY!

For the Truffle Buffalo Dipping Sauce (Truffalo Sauce):

  1. Place all ingredients in a bowl. Whisk well. Place in the fridge until ready to serve.

For the Honey Mustard Dipping Sauce: 

  1. Place all ingredients in a bowl. Whisk well. Place in the fridge until ready to serve.
