Holiday Brown Sugar Cinnamon Crumble Banana Bread

There are a few ways I make banana bread, but this version has quickly made its way to the top! Whenever I see a bunch of bananas going bad on my counter top, I don't get upset. In fact, quite the opposite because that means a new banana brad loft is officially in queue for that week. I love that you can turn something that is going bad, into something beautiful.

My typical go to banana bread is chocolate chip because who doesn’t like chocolate mixed with bananas!? But, this holiday brown sugar cinnamon takes banana bread to a whole new level. It makes you feel all giddy inside with each bite you take.

Enjoy it hot, cold, at room temperature, as is, with butter, with jelly, you name it! You cannot go wrong. I love enjoying it at room temperature and as is. You can truly enjoy the brown sugar cinnamon flavor that is intertwined with the banana, vanilla and buttery flavors.

I have a secret ingredient that I add to my banana bread that I love for many reasons. I can’t wait to share it with you! Are you ready for it? I add vanilla greek yogurt. It helps keep the banana bread moist for days, add a nice subtle sweetness and extra protein!

Holiday Brown Sugar Cinnamon Crumble Banana Bread

Moist banana, cinnamon and brown sugar flavors with hints of warm spice all packed together in one little loaf. It’s perfect for breakfast, a snack or dessert!

Ingredients

For the Banana Bread: 

  • ½ Cup butter, melted
  • ½ Cup white sugar
  • ½ Cup brown sugar, packed
  • 2 large eggs
  • 2 TSP vanilla extract
  • 1 and ½ Cup all purpose flour
  • 1 TSP baking soda
  • ½ TSP salt
  • ½ Cup vanilla greek yogurt
  • 4 large ripe bananas, mashed
  • 1/3 Cup mini semi sweet chocolate chips + more for garnish on the top
  • 1 TSP ceylon cinnamon or regular cinnamon

For the Brown Sugar Cinnamon Crumble Mixture:

  • 1/2 Cup brown sugar
  • 2 TSP ceylon cinnamon or regular cinnamon
Instructions
  1. Preheat the oven to 350 degrees and prepare your baking pan. Spray a 9” rectangle baking pan with non-stick spray, set aside.
  2. In a large bowl, melted butter. Once melted add your white sugar and brown sugar then mix with a hand mixer.
  3. Add eggs one at a time and followed by your vanilla extract. Mix again.
  4. Sift in your flour over the butter and sugar mixture, followed by the baking soda, ceylon cinnamon and salt. Mix again with your hand mixer until everything is combined.
  5. Mash your bananas in a separate bowl and add to your batter. Next, add your vanilla greek yogurt to the batter and mix again. Add your mini semi sweet chocolate chips and mix again.
  6. Make your brown sugar cinnamon crumble mixture and set aside.
  7. Add your banana bread mixture one layer at a time. So, pour about 1/4 -⅓ of the mixture into your prepared baking pan, then sprinkle some of the cinnamon sugar mixture over. Repeat until you have filled your pan. There should be 3 layers.
  8. Sprinkle remaining cinnamon sugar over the top and cover completely. Sprinkle some extra mini chocolate chips on top as well before you place in the oven. You want the top to be sprinkled with extra brown sugar cinnamon crumble so it become nice and caramelized and crisp on top.
  9. Bake at 350 for 60 minutes or until the top is golden brown.
  10. When done, remove from heat, place on a cooling rack and let cool completely, another 60 minutes.
  11. When ready, carefully remove from your pan.
  12. ENJOY!
