Open Faced Summer Camp Skinnylicious Sloppy Joe’s Big Mac Style

I have to admit that I love the flavor combination a big mac possesses. But, I don’t love all of the calories and the way they prepare it, so I never eat them. Since I find myself craving them every so often, I created my own spin on the famous burger.

This one pan, 30 minute meal is so easy to make and perfect for meal prepping, those busy weeknights, impromptu lunches or dinners and the football Sunday’s. You get all of the flavors of the classic Big Mac without the guilt!

My Pretty Plate Skinny Big Mac sauce is made with a few key items, but there are 2 items you might not expect. Now, brace yourselves because I am going to let you in on my little secret: it is made with Greek Yogurt and Carrot Ketchup. Yep, you just read that right…carrot ketchup! We can all thank The New Primal for this one. I love all of their products and this carrot ketchup takes your healthy sauce game to the next level.

Now, let’s be honest, the constant struggle to find that right balance between indulging and wanting to eat healthy is an ongoing thing. Big Macs are such a nostalgic memory, but I bet you don’t find yourself going through the drive thru as often anymore (or maybe you do).

Either way, I love these messy babies because they are open faced, I ditched that top bun over here… because who needs it anyway!? The sauce contains healthy ingredients, plus all of the toppings and inclusions themselves are 90% vegetables with the exception of the cheese. You bet I will be eating this on repeat all football season long.

Ingredients

For the Opened Faced Summer Camp Skinnylicious Sloppy Joe’s:

  • 1 Lb. Ground Beef, grass fed 85/15%
  • Toasts (Texas Toast Style or bread cut in Texas toast form)
  • Half of a yellow onion, minced + 2 TBSP extra for topping on the sloppy Joe’s
  • 1 TBSP olive oil
  • 4 garlic cloves, finely minced
  • Salt and black pepper
  • 1/2 cup Skinny Big Mac Sauce for the beef (recipe below) + remaining for serving on the side
  • Dill pickles, diced
  • Shredded lettuce
  • Square American cheese slices
  • Sesame seeds, for garnish on top

For the Skinny Big Mac Sauce: 

  • 1/3 Cup Carrot Ketchup
  • 2 TSP Coarse Dijon mustard
  • 1/4 Cup Distilled White Vinegar
  • 2 TBSP Sweet Pickle relish
  • 1 Cup greek yogurt or healthy mayo of your choice
  • Pinch of Salt
  • 1/2 TSP Onion powder
  • 1/2 TSP Garlic powder
Instructions
  1. Make your skinny Big Mac sauce. Combine all ingredients in a bowl and whisk to mix well. Set aside.
  2. Finely mince your onion and fresh garlic. Set aside.
  3. Prepare your other ingredients, thinly shred your lettuce and cut your American cheese square in smaller form if desired, but not necessary. Dice your pickles and set aside.
  4. Head a pot over medium heat. Add 1 TBSP olive oil. Once heated add your minced onion and garlic. Season with salt and pepper to your liking. Sauté for 2-3 minutes until fragrant and onions become translucent.
  5. Add your ground beef and cook until no longer pink.
  6. Once meat is cooked, carefully drain as much fat as you can. Then, place pan over medium to low heat. Add your skinny Big Mac sauce and combine.
  7. Once meat is done, remove from heat and set aside.
  8. Slice your toasts and place in a baking sheet, bake at 350 for 5-10 minutes just to get them nice and toasty. When they are done to your desired toastiness, remove from heat.
  9. To assemble: place one slice of American cheese on the bottom, top with a generous amount of Big Mac meat on your toast. Then, top with minced onions, shredded lettuce and dice pickles. Garnish with sesame seeds.
  10. ENJOY!
