4 Ingredient Birthday Cake Açaí Bowls

I combined a few of my favorite things to create this tri-layer acai bowl. The best part is that the acai smoothie layer only requires 4 ingredients to make! The other two layers are optional, but highly recommended to make it complete. The chia seed pudding is just as easy requiring only 3 ingredients to make.

There are two things I love: birthday cake with sprinkles + pudding. In addition, I love being healthy. So, I decided to create the ultimate birthday cake, pudding, acai bowl in one. Plus with the unlimited toppings of my choice, I felt like I had froyo right in the comfort of my own home!

With regards to the presentation, I used two different cups that are great for eating right away at home and also, for when you are on the go and need to throw a lid over it. A video of the bowls with the lids on are shown below.

Now, let's talk toppings. I love a good mix of fruits, nuts, grains and of course some sort of peanut butter or almond butter. With this bowl, I choose to do the following:

  • Dragon Fruit
  • Kiwi Fruit
  • Sliced Bananas
  • Shredded Coconut Flakes
  • Sliced Almonds
  • Almond Butter

Keep in mind you can do the same or select your personal favorites. The options are endless! My Dad loves chocolate, so maybe next time I will incorporate that in there.

When it comes to the layering, I started with a good hard base: the granola. I absolutely LOVE safe and fair's birthday cake granola. So, this is where the birthday cake part comes in. Their granola is so healthy and fun, it even has sprinkle chunks mixed in there. I then proceeded with the acai layer in the middle and lastly topped it with the chia seed pudding. It was a good consistency of soft seeded pudding, a cold smoothie mixture and a little bit of crunch all in one bite!

Are you someone who craves smoothie bowls at least once a week during the summer like me? If so, then this post is for you! Acai bowls are the ultimate fresh, colorful tasty treat on a hot summer day.

Ingredients

For the Açaí Smoothie:

  • 2 Cups frozen mango
  • 1 and 1/2 Cups unsweetened vanilla almond milk
  • 1 Frozen banana, sliced
  • 3 TBSP açaí powder

For the Chia Seed Pudding:

  • 2 Cups unsweetened vanilla almond milk
  • 1/2 Cup chia seeds
  • 1 TSP vailla extract

For the Smoothie Bowl:

  • Safe and Fair’s birthday cake granola, used for the base of the bowl
  • Topping options: dragon fruit, kiwi fruit, sliced banana, shredded coconut, sliced almonds and almond butter
Instructions
  1. Place; frozen mangoes, unsweetened vanilla almond milk and frozen banana in a blender and blend until thick and smooth.
  2. Add acai powder and blend again until smooth. Enjoy right away or place in the freezer until ready to enjoy.
  3. To make the chia seed pudding, whisk: unsweetened vanilla almond milk, chia seeds and vanilla extract in a bowl and place in the fridge overnight.
  4. In the morning, whisk again to make fluffy and separate the seeds. Pour over açaí smoothie.
  5. ENJOY!
