7 and 7 Grilled BBQ Chicken Naan Pizzas

Combining the power of both naan bread and tangy bbq sauce and then adding in mouthwatering caramelized red onions, fresh herbed cilantro leaves and melty cheddar + mozzarella cheeses gives you the most incredible pizza combination. One bite and you will be craving more!

Grilling season is upon us! Hallelujh! When you are from colder cities such as Chicago, little things like this bring you such joy after a long dark and cold winter season. So, for those of you who are just as excited as I am....get those coals or gas tanks prepared and get ready to fire up those bad boys! Because trust me, they are dying to be used just as much as we want to use them.

I am going to start by saying, I just love this recipe so much. As my Husband and I were making these together, we literally said to each other this is going to be our go to recipe for the entire summer coming up. It is perfect for a date night in, a fun activity to do with your kids and great for when you’re hosting your loved ones.

This recipe is the definition of: at home, fun, pizza making made easy. No need to make dough or sauce from scratch and no need for any long baking times. All that is required of you is easy prep work using fresh ingredients. You could even say this qualifies as a lazy, non-complicated go to recipe when you’re in that type of mood. However, don’t get confused, lazy and non-complicated recipes does not translate to flavorless or boring meals what so ever. That is the beauty of this recipe, it truly is the whole package. Easy, fun to make and beyond tasty!

If you’ve never used naan bread as your pizza crust before, no worries! I am here to brag on why naan makes for one of the most ideal types of pizza crust:

  • It is the perfect size whether you are wanting a individual single serve pizza for yourself or you are cutting it up and sharing with others.
  • It gets the perfect amount of crisp on the bottom when grilled. Leave it on longer for a crispier bottom or take it off sooner for less crisp. You do you!
  • It is the most ideal thickness generally speaking because the bread is not too thick and its not too thin.
  • You have the option to use a plain naan bread or a flavored one and of course I opted to used the roasted garlic flavor. So, with that, there is already savory flavors built into the bread.

I am not only here to brag about the naan bread, but the BBQ sauce as well. Haven’s Kitchen Tangy BBQ Sauce might be one of the best BBQ sauces I’ve had. It is sweet, tangy, bold and everything I look for in a really good BBQ sauce. There are no added sugars and it is naturally sweetened with dates and plums. How cool! On top the the taste, their easy to use squeeze pouches make cooking and constructing these pizzas so easy and user friendly. There is no need to worry about accidentally over pouring sauce because it came out too fast from the bottle. And last, the pouches themselves are also 100% recyclable!

Before you get to the goods and details below, I have a few quick last minutes tips on some of the ingredients:

  • Chicken - Make sure to get butterflied breasts or butterfly them yourself at home. They will make the grilling process must easier and faster. Thinner chicken = more efficient.
  • Cheeses - Make sure to get fresh cheese blocks and shred them yourself. You will thank me later. Shredding the cheese yourself does not require that much for extra prep time and effort, however it is well worth it. It’s creamier, fresher and by far tastier. I got my blocks from Whole Foods. I purchased a part skim mozzarella block + milk cheddar or just cheddar cheese. I am telling you the cheese shreds just melt in your mouth!
  • Red onion - Caramelizing the red onion is also key to making these so tasty. The soft sweet buttery flavor does not compare to that raw bitter flavor. If you are someone that enjoys raw red onion, you can feel free to eliminate the process of caramelizing, however it is not recommended.
  • Arugula - I will admit it, I am not an arugula person. I hate them in salads, but garnishing the top of the pizza with them is a great way to get some extra greens in your diets and also is kind of like the icing on the cake in this instance. For some reason, the pizza is so good with the arugula on top. I also would not skip out on this even if you don’t like arugula like me. The combination and flavors of the pizza plus that are what make it so delicious!

Ingredients
  • 2 Packets Haven’s Kitchen Tangy BBQ Sauce
  • 1 Package roasted garlic naan flat breads (pack comes with 4 flat breads)
  • 1 LB. chicken breasts, butterflied and seasoned with salt, pepper and garlic powder
  • 1 Red onion, caramelized
  • 1 Block fresh park skim mozzarella, shredded using a cheese grater
  • 1 Block fresh mild cheddar cheese, shredded using a cheese grater
  • 2-3 TBSP fresh cilantro, finely chopped
  • Arugula leaves on top for garnish and serving with (optional, but highly recommended)
Instructions
  1. Season both sides of your butterflied chicken breasts with salt, pepper and garlic powder to your liking. NOTE: I like to season with a lot for extra flavor. But, not too much to where it is over powering. When done seasoning, set aside.
  2. Cut the ends off your red onion, peel the first layer off and then cut in half. Place the flat end down and begin slicing into half moons/rainbows. Place in a bowl and set aside.
  3. Using a grater, shred your fresh cheddar cheese block and your fresh mozzarella block. You have the choice to either place each type of cheese in two separate bowls or place them both in one bowl and mix together. Dealers choice. When done, set aside.
  4. Finely mince and chop your cilantro leaves. Place in a bowl and set aside.
  5. Heat a non-stick pan over high heat. Spray with non-stick spray and add your onions. Begin to caramelize over high heat. This will take about 15-20 minutes. NOTE: make sure you are constantly stirring and mixing, towards the end they might start to burn, if you notice this, lower the heat to medium. You want them to be nice and soft and golden bownish with hints of purple still from its original color. When done, place in another bowl and set aside.
  6. Begin heating your grill, when heated to about 350-375 add your prepared seasoned chicken breasts. Grill your chicken at 375 degrees for 5 min per side. NOTE: this is the timing if the chicken is thinner and butterflied. If you have a thicker breast, it might need more time. So, cook until no longer pink in the middle. When done, remove from heat, cut into pieces/cubes and place in a bowl.
  7. Heat grill to 400 degrees now. While warming construct your pizzas. Start by squeezing your Haven’s Kitchen Tangy BBQ Sauce over your naan flat bread. Using a basting brush, brush the sauce evenly over the top. Top it with your grilled chicken, followed by sprinkling as much or as little finely chopped cilantro leaves, then, as much or as little cheddar cheese and as much or as little mozzarella cheese and last by caramelized onion over the top.
  8. Using a large grill safe spatula, place your prepared naan pizza on your grill. Close the lid of the grill and grill at 400 degrees for 6-7 minutes (7 minutes if you want a crispier bottom).
  9. Remove from heat and let cool for about 5 minutes and then cut with a pizza cutter.
  10. Garnish the top with fresh arugula leaves and serve with extra Haven’s Kitchen Tangy BBQ Sauce if desired.
  11. ENJOY!
