Dijon Maple Butter Air Fryer Shrimp and Vegetable Skewers

If you didn’t already know, you can basically cook anything in the air fryer. It is hands down one of my favorite kitchen items. I will tell you that if you do not have one, you need to run and not walk to go invest in one right this second. I use mine every single week and I love it for multiple reasons:

  • It's a healthier way to cook, you can still have all of your favorite foods without the extra oils.
  • Every item comes out perfectly cooked everytime and I don’t have to monitor it like I would if I were to grill. Don’t get me wrong, I love my grilled foods. But, when you are in a pinch, feeling fatigued after a long day or just simply not in the mood to cook, this comes in very handy.
  • I also love the convenience and ease. Once the prep is done, I am just a few buttons away from feeding my whole family a delicious meal.

So, going back to my number 2 reason on why I love my air fryer: when you are in a pinch and want a grilled meal, but don’t have the time to cook let alone monitor the item that is being cooked, resort to your air fryer. I love grilled shrimp skewers. But sometimes the thought of firing up the grill especially during the week or the cold fall and winter months it’s just not possible.

These air fryer shrimp and vegetable skewers come out perfectly cooked with the shrimp nice and plump and juicy, plus the vegetables are crisp and tender. Did I mention that this meal is done in an easy 7 minutes!? This meal is the definition of easy and fast. I will note that you do not need the skewers. You can absolutely just toss them directly into the air fryer if you would like.

During the fall season I love incorporating fall flavors every chance I get. So, the combination of maple, butter and dijon could not be more perfect. Coating the shrimp in this mixture before they get cooked helps marinate into the protein and vegetables. When they are done, the flavoring is slightly sweet, savory and tangy.

When it comes to the skewers themselves, I used the skewers that are made for my airfryer. I have a cosori 5.8 qt. airfryer and this brand has fun accessories you can purchase in addition to. Their skewers are metal, come in a set of 5 and with a resting rack. If you are using wood skewers, make sure to soak them for at least 20 minutes ahead of time so they do not burn!

Dijon Maple Butter Air Fryer Shrimp and Vegetable Skewers

These could be a healthy snack or a healthy dinner, either way these dijon maple airfryer shrimp and vegetable skewers guarantees a light, healthy meal that is filled with savory fall flavors of maple, butter and dijon mustard.

Ingredients
  • 1 Lb. Shrimp, peeled and deveined 
  • 1/2 Cup butternut squash, cubed
  • 1/2 Cup zucchini, cut in coins
  • 1/2 Cup butter, melted 
  • 4 TBSP pure maple syrup 
  • 1 TSP minced garlic
  • 1 TBSP Coarse Dijon mustard, the new primal
  • 1/4 TSP salt
  • 1/4 TSP black pepper
Instructions
  1. Peel and devein your shrimp if it is not already, wash and pat dry.  Set aside.
  2. Cube your butternut squash, if needed and slice your zucchini in coins. Set both aside.
  3. Melt your butter in a microwave safe bowl. When melted, whisk in your maple syrup, dijon mustard, minced garlic, salt and pepper.
  4. Begin skewering your shrimp and vegetables, begin by skewering 1 shrimp, followed by a butternut squash cube and then a zucchini coin. Repeat until the skewer is full. Do this for all skewers. 
  5. Using a basting brush, baste the shrimp and vegetables with your dijon maple butter marinade. 
  6. Pre-heat your air fryer to 370 degrees. When done, place the @cosoricooks rack in the air fryer, then place your marinated skewers ontop. 
  7. Air fry for 7 minutes, basting your skewers half way through.
  8. When done, carefully remove from heat. Enjoy as is or serve with your favorite carb, lemon, parsley and extra butter. 
  9. ENJOY!

The ingredient list is missing lemon slices, shallot and garlic.
