Dragon Fruit Chia Seed Pudding Parfait

Before I truly knew how to make chia pudding and what went into it, I thought that it was a complicated mysterious thing that took skill to make. I thought that there was a special technique to get that jelly cream like consistency. Boy was I wrong. All you need is chia seeds, a plant based milk of your choice and 20 minutes. During those 20 minutes is when all the mystery is revealed. When you mix the chia seeds with the liquid it soaks up most of it and creates that jelly creamy pudding like texture.

To your surprise dragon fruit looks so pretty in pink, however it lacks in flavor. People find themselves taking a bite and then tasting little to nothing. To enhance the flavor and add some sweetness I mixed in raw agave, vanilla flavor in the milk and vanilla extract.

I then heightened this pudding and turned it into a parfait by adding coconut yogurt, shredded coconut, strawberry, mango and pineapple. The combination of it all brings you to a bright sunny tropical island.

What Milk Should I Use?

I tested this recipe out with two of my favorite plant based brands: Malk and Good Karma Flax Milk. They both worked extremely well and have great flavor. You can use the milk of your choice, however I would make sure to get vanilla flavor for added sweetness.

Tip When Making:

One important tip I wanted to share with you is to stir your chia seed pudding every 5 minutes for 20 minutes. I find that giving them a good mix about every 5 minutes until you’ve reached 20 minutes total (stirring 4 times) ensures that the chia seeds really get mixed within the liquid and do not all settle to the bottom. With every 5 minutes that pass by, you will notice the consistency getting thicker and thicker. After 20 minutes it will reach it’s desired thickness and the chia seeds will be well mixed at that point.

I am going to be honest with you, this is such an easy healthy recipe that will quickly become your favorite. This recipe makes 5 parfaits and will stay good in your fridge for over a week!

These Dragon Fruit Chia Pudding Parfaits can be enjoyed as a breakfast meal prep, an afternoon delight or post dinner dessert. It is an easy recipe that is loaded with bright, fresh, fruity flavor!

Ingredients

For the Chia Seed Pudding: 

  • 4 Cups unsweetened Vanilla Milk of choice, Good Karma Flax Milk with Protein or Malk Almond Vanilla brand
  • 1 Cup frozen dragon fruit cubes, thawed for 15-20 minutes, Pitaya Foods brand
  • 2 TBSP Raw agave
  • 2 TSP vanilla extract
  • ¼ Cup chia seeds

For the Toppings: 

  • Unsweetened vanilla coconut yogurt, So Delicious brand
  • Extra raw agave drizzled ontop of the coconut yogurt (if desired for some extra sweetness)
  • Strawberries, diced
  • Mangoes, diced
  • Pineapple, diced
  • Coconut shreds
Instructions
  1. Measure out 4 cups of milk and pour in your blender. Add 1 cup thawed dragon fruit. Next, add 2 TBSP raw agave and 2 tsp vanilla extract. Blend to mix well for about 30 seconds. When done, turn the blender off and remove the blender from the base and set aside.
  2. Measure out ¼ cup chia seeds and place ¼ cup chia seeds in each of your individual jars.
  3. Measure out 1 cup of your mixed dragon fruit milk, pour over your chia seeds. 1 cup of dragon fruit milk per jar.
  4. Using a fork, mix the chia seeds and dragon fruit milk in each jar well. Place in the fridge.
  5. About every 5 minutes for 20 minutes (4 times total), mix your chia seeds and milk well. You will notice it will begin to thicken. You want to make sure the chia seeds are mixed well in the milk so that the chia seeds are not all just sitting at the bottom.
  6. After 20 minutes, they should be mixed well enough and you will have your desired consistency. At this time you can leave them in the fridge for the rest of the day or night until ready to enjoy.
  7. To enjoy: top with unsweetened vanilla coconut yogurt, followed by a drizzle of raw agave if desired. Then coconut shreds. Next, top with a mixture of diced strawberries, mango and pineapple. Last, more shredded coconut.
  8. Mix everything together to make a wonderfully delicious pudding parfait.
  9. ENJOY!
