Fluffy Belgian Chocolate Chip Waffles

Make all your breakfast dreams come true with this easy, fluffy belgian chocolate chip waffles recipe. These utterly delicious, scrumptions waffles are slightly crispy on the outside with a fluffy soft inside and mini chocolate chunks for some added sweetness to start your day.

Do you ever just wake up in the mornings and crave chocolate chip waffles? Just me? Okay, cool cool cool. Well This happened to me recently and I popped on my site to snag the recipe and realized I do not have one! Oh my, I was taken back. Like excuse me. How? Why? What? I knew this needed to change ASAP.

This recipe is classic, sweet, lightened up and you can say healthy-ish. They are made with oat milk, coconut sugar and safflower oil. However, don’t let these healthier ingredients fool you though, these babies are large and in charge.

They are thickkkkk, fluffy and slightly buttery and no, they are not made with butter. But, using a butter stick to rub on the waffle maker or non-stick butter spray gives it that crisp golden buttery exterior. Serve these with your favorite fruit, jams, peanut butter, syrup and powdered sugar for the ultimate breakfast treat. UGH, they are SO good.

What Makes Them Fluffy?

I am going to let you in on a little secret that is the key and most important thing that makes them, well them and just that dang good.

When preparing the waffle batter, make sure to separate your egg yolks from your egg whites. Beating the egg whites until they are bubbly and frothy, then mixing them in after is sure to give them that soft fluffy inside you are looking for.

Now, not to toot my own horn, but these are hands down the best belgian chocolate chip waffles, no if’s and’s or but’s. Trust me, I do not make this claim lightly. I think I've made these almost every weekend since I created the recipe. These are sure to be a crowd pleaser for adults and children, they are such a staple you must have on your brunch or breakfast spread.

Fluffy Belgian Chocolate Chip Waffles

These Fluffy Belgian Chocolate Chip Waffles might look like they are from a fancy brunch spot in town or they might taste like they are from an upscale hotel, but all you need is less than 10 simple ingredients to make these at home yourself!

Ingredients
  • 2 Large eggs, the yolk separated from the egg whites
  • 2 Cups all purpose flour
  • 1/2 Cup coconut oil, melted
  • 1 TBSP baking powder
  • 1 and 1/2 Cup vanilla unsweetened flax milk, good karma brand
  • 1 TSP vanilla extract
  • 1/4 TSP salt
  • 2 TBSP coconut sugar, monk fruit sweetener or regular white sugar
  • ½ Cup semi sweet mini chocolate chips
Instructions
  1. In a bowl, combine flour, baking powder, salt and coconut sugar or sugar of choice. Whisk the dry ingredients well to combine.
  2. In another bowl, combine egg yolks (IMPORTANT: set egg whites aside in another bowl), milk, vanilla extract and safflower oil or vegetable oil. Using an electric hand mixer or whisk, mix until well combined.
  3. Take your wet ingredients and use an electric hand mixer or whisk, mix your wet ingredients into your prepared dry ingredients.
  4. Take your egg whites bowl and using an electric hand mixer, beat until fluffy, very bubbly and frothy looking.
  5. Pour your fluffy whisked egg whites into the batter. Use your  electric hand mixer beat on low or medium low speed to combine everything together.
  6. Add you ½ cup semi sweet mini chocolate chips to the batter and using a rubber spatula, mix well to combine and fold into the batter.
  7. Heat your waffle maker, spray with non-stick spray or coat with butter. When ready, pour about half a cup or enough to fill into the maker. Using a spatula, spread the batter out evenly and close the lid. Cook according to the waffle maker.
  8. When done, remove the waffle from the waffle maker and let cool.
  9. Continue this process until all the waffles are made.
  10. Serve immediately with fruit of choice, butter, peanut butter, jams and syrup. Garnish with powdered sugar.
  11. ENJOY!
