Sweet and Savory Raisin Apple Pecan Stuffing

When Thanksgiving rolls around and you are in the mood for something sweet and something savory at the same time and you can’t decide this dish right here will cure all of those cravings! I am obsessed with stuffing generally speaking and I am even more obsessed with this recipe! This recipe includes all of those festive fall flavors one would look for and it is sure to be a hit at any holiday gathering.

I was able to easily source the raisin pecan bread I used in this recipe from one of my favorite stores, Whole Foods. They had this available in their bakery section not the bread aisle. When I saw it, I immediately knew I needed to incorporate it into my Thanksgiving spread. It was a non-traditional bread and it sounded so intriguing to me! If you are having trouble sourcing this, you can substitute for a cinnamon raisin bread as well and add in chopped pecan pieces.

The key to this recipe is purchasing it ahead of time, cutting it into cubes the same day you get it and then placing it in a ziploc bag or tupperware for a day. You want day old bread for stuffing. You DO NOT want to use fresh bread. Your dish could come out soggy.

Now, let’s chat about the apple seasoning I used in this recipe. All The Good Stuff was so kind to send me some of their Fuji Apple Spice Seasoning to incorporate into my recipes this holiday season. I was so excited about it! It is a sweeter seasoning and the smell of it is truly so divine. It makes me feel all giddy inside. It reminds me of cinnamon sugar, thanksgiving and christmas all in one!

If you are unable to source a apple seasoning, I would substitute with cinnamon sugar. Although this is a sweeter season it is not over powering or overly sweet. It made for the perfect addition to this raisin apple pecan stuffing. It complimented the apples really well and when it got mixed into the chicken broth it was a sweet and savory dressing that really brought out the flavor in the whole dish.

Sweet and Savory Raisin Apple Pecan Stuffing

You heard that right! This is a sweet and savory stuffing all in one dish. Here you will get the best of both worlds! When this dreamy dish gets baked it creates a thanksgiving aroma in your kitchen unlike any other.

Ingredients
  • 1 Loaf raisin pecan bread from whole food OR cinnamon raisin bread, cut in cubes and at least a day old
  • 1 Gala apple or honey crisp apple, diced small
  • 3/4 Cup celery, sliced
  • 1/2 Cup yellow onion, diced small
  • 1 TBSP minced garlic
  • 1 TSP fresh Rosemary, minced
  • 2 Eggs
  • 1 and 1/2 Cups chicken broth
  • 1 TSP apple seasoning OR cinnamon sugar (mix 1 TSP cinnamon and 1 TSP white sugar and mix, then scoop 1 TSP of the mixture) + more for sprinkling ontop if desired
  • 1/2 Cup dried cherries OR raisins if you want extra raisins
  • Salt and Pepper to taste
Instructions
  1. Bread should be 1 day old. Make sure to cut your bread in cubes ahead of time.
  2. Wash and dry your celery, slice and place in a bowl and set aside.
  3. Wash your apple and dice. Set aside.
  4. Dice your yellow onion and set aside.
  5. Finely mince your fresh Rosemary and set aside.
  6. Heat a pan over medium heat. Add 2 TBSP olive oil. Once hot add you onion and garlic cook 2-3 minutes until fragrant and onions are translucent. Season with salt and pepper and mix.
  7. Add your celery, apples and fresh Rosemary. Season will a little more salt and pepper and mix. Cook for 5 minutes then remove from heat.
  8. In another bowl whisk together, chicken broth, eggs and apple seasoning or cinnamon sugar.
  9. Place your bread cubes in a large bowl. Add you dried cherries and your apple and celery mixture. Slowly pour your chicken broth mixture over the bread, stopping half way through to mix if needed. You want the bread to soak up the mixture as you are pouring. You do not want it to be too soggy.
  10. Once mixed, place in a baking dish. Cover and Bake at 400 for 20 minutes.
  11. Garnish with extra rosemary leaves and apple seasoning if desired.
  12. ENJOY!

The ingredient list is missing lemon slices, shallot and garlic.
